Braised Pork Ribs using Pressure Cooker 氣炸過紅燒排骨


Ingredients:

  • 500g pork ribs
  • Rock sugar
  • Sliced green onions using only white parts
  • Sliced ginger
  • Few star anise
  • Few bay leaves
  • A little Cinnamon stick
  • Few dried chilli
Sauces:
  • Cooking wine
  • Light soybean sauce
  • Vinegar
  • A little bit of dark soybean sauce
  • Oyster sauce
To-do:
  1. Add cooking wine and wash the pork ribs few times with running water until no blood seen.
  2. Then add pork ribs in the cold water then cook until boiling. Skim out the foam.
  3. Then soak pork ribs into prepared hot water.
  4. Add oil on the pan. Add rock sugar and cook in low medium heat until resolves and golden color. 
  5. Wait until boiling and add pork ribs (without soaked water).
  6. Add all the ingredients, turn off the gas (to avoid burned) and saute until fragrant. 
  7. Then add all the sauces and stir fry well.
  8. Add water only to cover the pork, wait until boiling and add into pressure cooker. Cook for 30 minutes.
  9. Move the pork ribs into the pan and using high heat to reduce the sauces. 
  10. Taste the flavor. Add more sugar if needed.
