Ingredients:
- Pork ribs + tapioca starch (wash)
- Fermented black beans
- Minced garlic
- Sliced red chilis (optional)
- Garnish: sliced long green onions and long red chilis
For marinating the pork ribs (mix well) + tapioca starch :
- Oyster sauce
- Sugar
- Rice wine
- White pepper
- Tapioca starch (all ingredients mix well, lastly add tapioca starch)
To-do:
- Wash pork ribs and add tapioca starch. Mix well and rinse few times with water to wash off the blood from the ribs. Drain them and put in a bowl.
- Wash fermented black beans, rinse them off and put aside.
- Marinating pork ribs by adding oyster sauce, sugar rice wine and white pepper. Mix well. Last, add tapioca starch and let it marinate for 15 minutes. Put aside.
- In medium low heat pan, add oil. Add fermented black beans and stir fry until fragrant. Add garlic and chilis and sauté until fragrant.
- Add into marinated pork ribs with all the fermented black beans oil. Marinate for another 15 minutes.
- Then add into iron plates for steaming. Don't overlapping for better cooked. Steam for at least 20 minutes.
- Add sliced long green onions and long chilis for garnish.
