Burdock Chips / Gobo / 牛蒡



Ingredients:

  • 150g burdock
  • Vinegar
  • 2tbsp soy sauce
  • 1tbsp sake
  • 3tbsp potato starch
  • Vegetable oil
  • Salt and pepper
To-do:
  • Scrape the burdock skin with back of the knife. Wash with water.
  • Add water in a bowl and add vinegar into it.
  • Cut burdock into bar (cut into 4) and soak them in vinegar water.
  • Drain the vinegar water and rinse with water.
  • Add soy sauce and sake in a bowl and mix well. Let it absorb for 30 minutes.
  • Drain the excess liquid and coat with potato starch.
  • Deep fry in heated oil until golden brown.
  • Add salt and pepper as your preferences. Ready to eat.
