豆豉雞 / Chicken in Black Bean Sauce


Ingredients:

  • 600g chicken with bone
Marinating sauce (add ingredients 1-5 to the chicken, mix well then add potato starch, mix well):
  1. 1/2tsp salt
  2. 1/2tsp sugar
  3. 10ml soy sauce
  4. 10ml shaoxing wine
  5. white pepper
  6. 10g potato starch
  7. 10g cooking oil
Others:
  • 3gloves garlic, minced
  • 1 small block ginger, minced
  • few pcs green onions, long cut (white and green separate)
  • Black bean sauce (super salty alert!)
  • Shaoxing wine
  • Optional: sugar
To-do:
  1. Cut chicken to eat bite size.
  2. Add marinating sauce from no. 1 to 5 to the chicken and mix well. 
  3. Add potato starch, mix well.
  4. Add cooking oil, mix well. Marinate for 20-30 minutes. Set aside.
  5. Add oil in the pan. Add marinated chicken. Cook until both side turn brown color and fragrant. Set aside the chicken without excessed oil.
  6. Use appropriate remaining oil and fry minced garlic, ginger and white parts of green onions.
  7. Add appropriate amount of black bean sauce. Cook until fragrant.
  8. Add chicken. Add shaoxing wine and sugar (optional). Turn to low heat. Taste to your preferences and cook through. Ready to serve.
