Salted Egg Fried Loofah / Oyong Telur Asin / 金沙絲瓜

Ingredients: 

  • 2 Loofah / 250g Loofah
  • Few thin sliced Ginger
  • 1pcs Green Onion (separate white and green parts, cut julienne)
  • 1pcs Salted Egg (separate white and egg yolk / smash egg yolk and cut dice white egg)
  • 100ml Water
  • 1/2tbsp Goji Berry
  • 1/2tbsp Cooking Wine

To-do:
  1. Soak goji berry with cooking wine and put aside.
  2. Heat oil in the pan. Add ginger and white parts of green onion. Stir fry until fragrant.
  3. Add salted egg yolk. Sauté until start bubbling.
  4. Add loofah and 50ml water. Close lid and let it cooking for 1-2 minutes.
  5. Add soaked goji berry. Add salted egg white. Add remaining water. Taste as per your preference.
  6. Then add green parts of green onion. Ready to serve.
