Ingredients:
- 150g all purpose flour
- 25g sugar
- 1/2tbsp baking powder
- 1/8tsp salt
- 1/2tbsp finely grated lemon zest
- 57gcool unsalted butter, cut into small pieces
- 63ml whipping cream
- 30ml milk, plus extra for brushing
- 1/2 large egg
- 1/2tsp vanilla extract
- 80g fresh or frozen blueberries
Glaze (mix together):
- 40g icing sugar
- 7ml lemon juice
Baking in the oven:
190C 20 minutes
To-do:
- Mix all dry ingredients (all purpose flour, sugar, baking powder, salt) and sieve through.
- Add grated lemon zest.
- Add unsalted butter, rubbing and mixing well with the dry ingredients until feel smooth. Don't over mix.
- In another bowl, add all the wet ingredients (whipping cream, milk, egg, vanilla extract) and mix into the dough.
- Add fresh or frozen blueberries by folding the dough few times. Then cut the dough into desired size. Brush with milk before baking.
- Bake in the oven in 190C for 20 minutes. When ready, glaze with lemon juice glazing.
