Lemon Blueberry Scones using Whipping Cream


Ingredients:

  • 150g all purpose flour
  • 25g sugar
  • 1/2tbsp baking powder 
  • 1/8tsp salt
  • 1/2tbsp finely grated lemon zest
  • 57gcool unsalted butter, cut into small pieces
  • 63ml whipping cream
  • 30ml milk, plus extra for brushing
  • 1/2 large egg
  • 1/2tsp vanilla extract
  • 80g fresh or frozen blueberries
Glaze (mix together):
  • 40g icing sugar
  • 7ml lemon juice
Baking in the oven:
190C 20 minutes

To-do:
  1. Mix all dry ingredients (all purpose flour, sugar, baking powder, salt) and sieve through.
  2. Add grated lemon zest.
  3. Add unsalted butter, rubbing and mixing well with the dry ingredients until feel smooth. Don't over mix.
  4. In another bowl, add all the wet ingredients (whipping cream, milk, egg, vanilla extract) and mix into the dough.
  5. Add fresh or frozen blueberries by folding the dough few times. Then cut the dough into desired size. Brush with milk before baking.
  6. Bake in the oven in 190C for 20 minutes. When ready, glaze with lemon juice glazing.
