Carrot Cake with Cream Cheese Frosting


Ingredients:

Carrot cake

  • 2pcs egg
  • 80g brown sugar
  • 82g vegetable oil
  • 1/2tsp vanilla essence
  • 125g cake flour
  • 2tsp baking powder
  • 1/2tsp baking soda
  • 1/2tsp cinnamon powder
  • 1/4tsp salt
  • 180g shredded carrot
  • 40g walnuts or any nuts
Cream cheese frosting
  • 120g cream cheese
  • 30g powdered sugar
  • 70ml heavy cream
  • 1/2tsp lemon juice
  • 1/2tsp salt
Bake in air fryer 16 diameter round cake pan
35 minutes 180C

To-do:
  1. Mix eggs, brown sugar and vanilla essence with hand mixer. Then add vegetable oil. Mix well.
  2. In another bowl, mix all dry ingredients: cake flour, baking powder, baking soda, cinnamon powder and salt. Sieve through and add into egg mixture. Mix well with spatula.
  3. Add shredded carrot and walnut. Mix well. Add into cake pan.
  4. Air fry 180C in 35 minutes. Let it cool before adding cream cheese frosting.
  5. Meanwhile, add all ingredients for cream cheese frosting and mix well with hand mixer.
  6. Divide cake into 2 parts and add cream cheese in the middle and on top of the cake.
