Ingredients:
- 1 large (around 230g) potato, peeled and grated
- 1/4 cup or 1/2 small onion, grated
- 1/4tsp salt
- 1/4 cup potato starch or around 40g corn starch
- vegetable oil
For dipping sauce:
- 2tbsp soy sauce
- 1tbsp freshly squeezed lime juice or vinegar
- 1 green onion, chopped
- a little bit thinly sliced onion
- 1 jalapeno pepper, chopped
- 1/2tsp sugar
To-do:
- To make dipping sauce, mix all dipping sauce ingredients together and set aside.
- Add grated potato and onion in a bowl. Add salt and potato starch. Mix well.
- Heat up nonstick pan to medium-high heat. Add vegetable oil and grated potato mixture and spread thinly on the pan.
- Cook few minutes until the bottom of the pancake turns crispy and light golden brown. Turn it over. Cooking until both sides are crispy and light golden brown. You can add oil inbetween.
- Serve hot with dipping sauce.
