Ingredients:
- 600g white radish -> thin shred and squeeze radish water
- 230g radish water (if not enough, can add water)
- 13g shitake, thin cut
- 35g dried shrimp (ebi), soaked and fine chopped
- 230g rice flour
- 25g potato starch
- 1tsp salt
- 1tsp sugar
- 3/4tsp white pepper
- 400ml hot water
To-do:
- Thin shred radish and squeeze out the radish water. We need radish water for 230g (add water if it is not enough radish water) and put aside.
- Mix flour, potato starch and radish water, put aside.
- Add a little bit of oil, add shitake and cook until fragrant. Then add dried shrimp. Cook until fragrant, then add to flour mixture.
- Using the same pan, add oil and shredded radish into the pan. Add salt, sugar, white pepper and hot water. Cook until the water is boiling. Then add into flour mixture.
- Mix well all the ingredients of the flour mixture.
- Using the same pan, no oil needed. Add the flour mixture into the non-stick pan in low heat. Stir until it is not sticky anymore / one big dough. This will decide how soft or hard the radish cake.
- Then pour this dough into steam bowl (place parchment paper below and add a little bit cooking oil on the side to prevent dough stick to the bowl) also on top of the dough and let it steam for around 50 minutes.
- When it's ready let it cool or put into refrigerator. It is easier to cut when it is cold.
- Cut into eat size and fry with a little bit oil until your desire gold brown color. You can serve with soy bean sauce or chili sauce :)
