Steamed Coconut Sponge Cake



Ingredients:

  • 3pcs room temperature eggs
  • 75g sugar
  • 86g cake flour (sieved)
  • 4tbsp coconut cream
Square pan: 174x164x70mm 
Steaming time: 35minutes 

To-do:
  1. Whisk eggs with hand mixer in low speed then add half of the sugar. Whisk until the color turns to pale yellow. Change to high speed, add the rest of the sugar and whisk until soft peak or about 7 minutes.
  2. In between boil water for steaming. 
  3. Add cake flour in two batch, mix well with spatula. Don't over mix.
  4. Add coconut cream. Mix well.
  5. Layer the bottom of the pan with baking paper for easy removal.
  6. Pour the batter into the pan and cover with aluminum foil. Then steam in the boiling water for 35minutes or when you poke with toothpick comes clear.
