Mapo Tofu




Ingredients:

  • Sichuan peppercorn / 花椒
  • Minced pork
  • Minced garlic
  • Green onions, thinly sliced
  • 1tbsp Dou ban jiang / chili bean sauce
  • 1/2tsp Tomato ketchup
  • 1/2tbsp Soy sauce
  • 1/2tsp Sugar
  • Sesame oil
  • Corn starch + water mixing
To-do:
  1. Add oil in the heated pan and fry Sichuan peppercorn until fragrant. Filter the peppercorn with oil. We are using only the oil.
  2. Stir fry peppercorn oil with minced pork. Cook until the pork becomes white color.
  3. Add minced garlic and half portions of the green onions on the side and stir fry until fragrant.
  4. Add dou ban jiang and tomato ketchup, mix well.
  5. Add soy sauce and sugar, mix well. Taste the flavor. If it's too salty, add water and let it boil.
  6. Add sesame oil and mix well.
  7. Add corn starch water and mix well. Add half of the green onions before serving.
