Ingredients:
- 1kg beef shank / sengkel kembang (big cut/cut double eat size)
- 1/2pcs ginger (cut thin)
- 1pcs garlic (whole)
- 3pcs long red chili (cut in 3 parts)
- 2pcs spring onion (1/4 thin sliced for garnish, the rest tie up together)
- 50g rock sugar (smash to small size)
- Star anise, cinnamon, bay leaves
- 5tbsp soy bean sauce
- 100g doubanjiang / chili bean sauce
- 1,5l water
- 1pcs carrot (cut eat bite size)
- 1pcs radish (cut eat bite size)
- Noodles
- Optional: Pak choy
To-do:
- Rinse beef with hot boiling water
- Add a little bit oil in the pressure cooker and stir fry beef until golden color. Bring out the beef and using the oil to stir fry ginger, garlic, chili and tie up spring onion until fragrant
- Add rock sugar and cook until it is melting and turn brown color
- Add star anise, cinnamon, bay leaves, sauté a while
- Add soy bean sauce and doubanjiang, mix well
- Add beef and water, mix well
- Cook in the pressure cooker for 30 minutes, then taste the flavor and check if the beef is already tender
- Add carrot and radish and cook another 20 minutes
- Serve with boiled noodles, pak choy and green onions on top
