Ingredients:
- 2pcs chicken thigh fillet (make few cuts on the meat for easy frying), I don't have chicken fillet so just using chicken with bone
- 1/2-1tbsp sesame oil
- 8pcs whole garlic
- 8 slices ginger
- 1tbsp crystal sugar (if the sugar in rock shape, make it finer)
- 2tbsp soy sauce
- 2tbsp rice wine
- Basil as you like
To-do:
- Dry frying the chicken fillet (skin below) on the medium heat pan, fry until the chicken oil coming out and golden brown. Only flip over if the chicken skin is already golden brown! It's around 2-3 minutes. Another side fry around 1 minute. The chicken is not fully cooked, we make this step only for fragrance purpose.
- Take the chicken out and cut mouth bite. Not too small, because the chicken will later shrink a bit.
- There will be oil left from the frying chicken. Don't use it, there will be too much oil.
- Add sesame oil on the heat pan. Fry ginger until golden color and add whole garlic. Add only crystal sugar if you have smell garlic fragrance. Just cook the crystal sugar until it is melting, don't over cooked, or it will become caramel sauce.
- Add cut chicken on the pan and mix well.
- Add soy sauce and mix well.
- Add rice wine and mix well. All cook in medium heat.
- Taste the flavor and adjust as per your taste.
- Close lid and let it cook for 2-3mins or until the sauces half dry.
- Turn off the heat and add basil and mix well. Using remain heat to cook the basil.
- And it's ready to serve :)
