Steamed Banana Cake with Coconut Milk / Pisang Nagasari



Ingredients:

Mix all part 1 ingredients (cooked on the pan until simmered and leave it cool)

  • 400ml coconut milk (I am using Kara thick coconut milk 200ml and mix with water until 420ml)
  • 80g sugar
  • 1/4tsp salt
  • 1/4tsp vanilla essence
  • 4pcs pandan leaves
Part 2 ingredients
  • 113g rice flour
  • 45g tapioca flour
  • 4pcs pisang mas or any sweet bananas (cut into long slice)

To-do:
  1. Prepare steamer and pre-boil it.
  2. Mix rice flour and tapioca flour.
  3. Add in cooled part 1 ingredients. Mix well. The batter should have watery texture.
  4. Then add a bit of oil on the steamed pan or steamed bowl.
  5. Add in one big spoon of the batter into the pan/bowl (depends on the bowl size).
  6. Put it on the steamer and steam for around 5mins or until the surface is getting hard.
  7. Get out the pan/bowl.
  8. Add in sliced bananas on the surface and add another one big spoon of the batter or until the batter cover all the bananas.
  9. Put it on the steamer and steam for 5mins. 
  10. And do step 8 again until you are using all of the batter.
  11. Cool the banana cake before cutting it.
