Garlic Chicken Soup / 蒜頭雞湯


Ingredients:

  • Whole garlic (half portion for sauté, half left it for later) 
  • Chicken thigh 
  • Shaoxing wine
  • Green onions (cut thin slices)
  • White pepper (optional)
  • Salt
To-do:
  1. Add chicken thigh on medium high heat to non-stick frying pan, add salt and sauté until fragrant. No oil needed. Fry until medium brown and add half portion of garlic. Sauté the garlic until half brown, not black!
  2.  Add water and half left garlic to the pan. Cook for 10-15min on low heat for thicken soup. 
  3. Add shaoxing wine and scallion. Change to higher heat to release fragrance of wine. Leave it boil for few minutes and add white pepper. 
  4. The soup is ready :)
