Salmon Head with Tofu Soup


Ingredients:

For marinating 

(rub salt and shaoxing wine on the washed dried salmon head and put in the chiller for 30mins, pat dry before frying)

  • 2 salmon head
  • 1/2tsp salt
  • 1tsp shaoxing wine

Other ingredients:

  • 3 slices ginger
  • 700ml boiling water
  • 1tsp lemon juice
  • 1tsp shaoxing wine
  • Medium firm tofu
  • Lettuce
  • Coriander/celery
  • Optional: 1tsp Japanese fish powder / Dashi
  • Salt and white pepper
To-do:
  1. Put 1tbsp oil on the heated pan and rub with slices ginger
  2. Fry salmon head with medium high heat until light brown (around 5mins each side)
  3. Pour in boiling water and let it cook for 10mins with covered lid
  4. After 10mins, put in lemon juice and shaoxing wine follow with tofu chunks, cover the lid and cook for 5mins
  5. After 5mins, soup turn into milky white color
  6. Add in lettuce and coriander/celery and cook until the lettuce soft (your desired texture)
  7. Add in salt, pepper and dashi and taste accordingly
  8. Let's eat!
