Ingredients:
For marinating the chicken (mix all ingredients below and marinate for 15mins):
- 2pcs chicken thighs without bone (cut vein and prick the skin with knife for better absorb)
- 2tbsp sake
- 2tbsp soybean sauce
- 1tsp ginger paste
For frying:
Mixing all-purpose flour with tapioca flour with comparison 1:1
For cooking:
1pcs onion
1-2 green onion (divide white (cut sideways) and green parts (cut thin small for sprinkle))
15tbsp dashi / Japanese broth in liquid
3tbsp soybean sauce
3tbsp mirin
3tbsp sake
4pcs mixed eggs
White pepper
optional: white sesame
To-do:
- Marinate chicken for 15mins
- Pan fried marinated chicken covering with flour on a hot pan, fry until crispy skin outside. It's ok half cooked. Then get out of the oil, rest for around 5mins and cut in desire size. Put aside.
- Fry onion and white parts of green onion until fragrant
- Pour in dashi, soybean sauce, mirin and sake inside the pan. Cook for 1mins.
- Put cut chicken thighs and cook for another 3mins or until the chicken absorb the sauce
- Pour 2/3 of mixed eggs, close the pan cover and cook until the eggs become harden.
- When it's about ready, pour the rest of the mixed eggs and turn off the fire. That will make two level of egg texture, harden and half cooked eggs.
- Sprinkle with white pepper, green parts of green onion and white sesame.
